I'm not sure there _is_ a "correct" way to use DOF preview. The image is
smaller and grainier than it would be as a finished print, so it always
shows more DOF than you would actually get. However, it can be useful.
If you want to know whether a particular object will be acceptably
sharp, stop the lens down slowly and note how the object sharpens with
respect to other objects. If the object becomes acceptably sharp
_before_ you've stopped down all the way, it will probably be okay in
the print.
You can also use DOF preview to judge a "compromise" focus position to
bring objects in the foreground and background into acceptable focus
simultaneously. As you stop down, note whether the front and rear
objects sharpen at the same rate.
