There's practically a whole episode of the early 80s TV series "The
Photographic Vision" dedicated to Winogrand in action, describing (as
he's shooting) what he's after and why he likes what he sees.

This series is currently screening continuously on the (Oz) ABC as
part of the "Open Learning" scheme---your local cable or educational
network will quite probably show it at some point (or try a public
library).

There's episodes containing interviews with other well known artists,
too.  Ansel Adams and Arnold Newman spring to mind...
