I presume you're talking about black-and-white paper.

It's not possible to predict. Generally, unused photo paper will lose
contrast and gain fog as it ages. Lower temperatures impede the aging
process but will not prevent it. Freezing is better, but wrap it in
plastic to avoid condensation and warm it thoroughly to room temperature
before opening. Within 5 or 10 years it will probably be pretty much
useless unless kept frozen, but realtively few people have any reason
for freezing paper for 10 years so it't not easy to say for certain.

Personally I'd say give the paper to a friend who can use it while it's
still good, then start off with fresh paper when getting started with
darkroom work again.

Benzotriazole used as a restrainer in the print developer will help
control fog.
