I keep hearing the Pentax K1000 being suggested as a great all manual
learning camera for students. If that is really so, I would think that
an OM1 would be among the best choices out there as it is certainly a
nicer camera than a K1000 in my opinion.

I think you should go with something that is not AE to start out with
(i.e. an OM1). It is too easy to flip that switch to Auto and forget all
about exposure. (Hmmm, I guess I do that pretty much all the time now
with my OM2Ss but I digress...) AE is wonderful but it is even more
wonderful when you have an understanding of what it is trying to do and
how it is doing it so that you can step in and uh...adjust as required.

Yes, OM mount lenses fit all OM cameras (I think...please correct me if
I'm wrong here). While I can't say I learned photography on an OM1, I
can say that most of my learning years were spent with one and I have no
regrets. Oh wait, I'm still learning and I still have a lot to learn 
(and never plan to stop either) ;-)

I guess what I am saying is get her a nice clean good working OM1. I'm
sure Tom Scales must have one he'll let you have for a reasonable price
and/or they are readily available and easy to find for not a lot of $.
The only reason I can think of to suggest the OM2000 is if you want to
get her something new, and then somehow lock that meter switch to
manual!
