If the item has not met reserve, or you have the
highest bid in on the item, I don't think it is
unethical for the seller to end the auction early if
he has agreed on a price with you. The seller is still
obligated to give ebay the commission on the sale at
whatever the sale price is, but that is practically
unenforceable for them.

As for bidders who missed out on the item because it
ended early and they weren't able to put in a winning
bid at the end, well they have no standing. They
should have bid their maximum early if it was so
important.

Having said that, as a bidder I almost always take my
chances and bid late.

One strategy I have used is to contact the seller and
tell them that if I am the high bidder at the auction
close, I will be delayed in getting back to them, and
I will tell them when I will be able to contact them.
This has been fine with the seller in every instance
so far.
