whew! that's a lot to answer.... i think that interiors are most difficult for light balencing rather than perspective control. while the 24 shift works like a dream, it is possible to get good interiors w/ a 21 or 18 (remember a 24mm shift is just an 18mm cropped correctly). if composed correctly, you can crop out what you don't need - this will put the photoshop back into real photography! though i use the software occassionally, i still use the old fashioned tricks for best effect.

since most kitchens use incandescent light, i would make your investment into a couple of small hot lamps (tungsten) that will be able to reproduce much better than daylight flash which can be harsh w/o a diffuser.

rates usually run $100-$150 per view depending on client, amount of shots, film format, etc...
