Chris,
My limited experience with both films:

T-Max:
  - contrastier
  - much finer grained
  - when you do get to the tabular grain, it's very, very harsh
  - less gradation in midtones
  - not as forgiving with exposure

Tri-X:
  - lower contrast; very long in the toe
  - coarser grain
- when you do get to the grain, it's softer, much like pebbles at the bottom of a stream; many use this to lend a texture to the print
  - superb mid-tones; very fine gradation and not muddy
- very forgiving with exposure; if anything is recorded on it you can usually get some kind of print out of it
