Any iMac users out there that can answer this question - what software do
you need to read the eSIF on CD (which is a CD rom created on a PC) on an
iMac?

Any Mac(not just iMac) running OS 9 or before should be able to read
it with the addition of Joliet Volume Access to enable the reading of
MS file names. I believe OS X will read it without any problems.
