Many do, depending on the assignment. Medium format is still small enough to
use hand-holdable cameras (though they're significantly bigger than a 35mm
camera), and can capture much more detail. Most of the wedding photographers I
know use medium-format, as does a pro product photographer friend of mine (when
he's not using his new digital, that is!). Higher-quality enlargements.
