Albert, There is no question that a spot meter and the zone system will give 
you more control of the results you are able to produce in B&W, the 
consistency of which will be a function of the degree you control the other 
elements involved in capturing and producing your images (shutter speed, 
aperture, film emulsion, temperature at which developed, development time, 
etc.).  You are correct about the limitations of color as it regards 
development times.  As I understand the application of the Zone system to 
color, it is a process of deciding what your exposure will need to be to give 
you properly exposed highlights.  Because of the limited latitude of color 
film, your are deciding where the spectrum available will fall in the image 
you are creating.  Depending on what you are metering off of, you will be 
either opening up, exposing at indicated exposure or stopping down to shift 
things to produce the results you are attempting to accomplish.  I am sure 
there are others who will offer their take on this subject.  Bill Barber
