My typical travel kit is this:

OM-1
Tokina 28/2.8
Zuiko 50/1.8
Zuiko 135/3.5

Plus extras like a small tripod, filters, etc. Occasionally I stick in a 2x teleconverter, or even a 500/8 cat, but the camera plus three lenses covers pretty much everything I ever want to photograph. All I ever yearn for is something wider than 28, and if I had something around 21mm I'd add that as well. I have taken two bodies with me in the past, but find that I hardly ever used the second body, so I only take one. I think a kit like this is perfect, not too cumbersome and covers all my needs.

Should be an amazing trip. I went to Jordan and Jerusalem with my family when I was quite young, and still remember the indescribable atmosphere in the narrow streets of Jerusalem's old city - like nowhere else I've ever been. Would love to go back with a camera! En route to Jordan for that trip, we stopped in Cairo for what was supposed to be a 1 hour stop, but fog in Amman meant we were unable to take off, and Egyptian entry conditions meant we were not even allowed off the plane. In the end we sat there for 12 hours - not an ideal Egypt experience!

(that merits consideration that is) that I don't currently have. There. It's open season on Jim.
