Welcome to the list Alexander.

It sounds to me as though you wish to perfectly frame the subject in the view 
finder with no unused area.

Another technique that you could consider is this.

Move the camera (with perhaps a Zuiko "made in Japan" version of the 50mm 
f/1.8 lens - or the macro)  further away from the subject until you feel sure 
that the DOF is enough. Perhaps take several shots, each next shot at an 
increasing distance. Make sure that camera is very stable and if possibly 
use the OM2000 or the OM4T or the OM2SP (?not sure about the last one) 
and the self-timer which gives mirror up and aperture prefire 12 seconds 
before the shutter fires.

Then you should, in at least one of the images, have the DOF you want.

Then crop the image to suit your needs.
