The software samples the picture preferably in a relatively featureless area like the sky. It essentially measures the pixel variation and makes a record of the pattern. It subtracts the variation pattern from the frame. You can adjust the amount of noise removal since too much may not look right. It is a repeatable and regular process, so you can put your camera's noise curve for each ISO setting into the software and you do not even have to sample anymore. Very cool.
