For those who have access to a good library, the latest issue of the trade 
journal  "Photonics Spectra"  ,has a lightweight discussion of Bayer artifacts 
at high magnification, where the pixels are individually visible.  This is not 
so much for art photography but more for industrial applications. "Resolution 
Considerations for Color Imaging Techniques" . June 2004. pp 114-116.  The 
comparison is not to Foveon, but to "B&W" sensor with sequential color wheel.
 
Note the basic idea of Bayer that the human eye is optimized for green (~the 
peak of solar visible spectrum), so the apparent sharpness is on average 
greater, if you have higher green resolution. Once you start magnifying to the 
point you see individual pixels, artifacts and smearing due to interpolation 
likely dominate perception over green acuity effects.
