Personally, I like to use the channel mixer. Add an adjustment layer
(channel mixer) and then set it to "monochrome" (if memory serves)
then play with the sliders to get red, yellow or green (or any
combination you want). That's me basing this off memory and not having
photoshop right in front of me so I might be a little off on the
steps. The advantage of this is you don't have to change colour modes
and you keep all the original colour data. Of course you can later
flatten the image and convert it to grayscale to save disk space.

Another technique that's fast but doesn't offer the control is to
simply go to the channels palette and select the one channel you like,
then switch to grayscale, that will then only use the single channel
for the conversion.

Of course like anything in photoshop there's at least 3 or 4 different
ways to get to the same result so use whichever method works for you.
