True, but some knowledgeable people seem to think that a lot is lost
with Bayer interpolation when converting to black and white. The
feeling is that a luminance only sensor where each pixel's output is
plotted and is not an estimate would greatly improve the quality and
acceptance of digital black and white. I probably could not tell the
difference though. :-)
