Speaking as a free-lance magazine editor, I MUCH prefer getting full  
colour shots as submissions, and converting to B&W using a channel  
mixer.

Consider a red apple on a green table cloth, both of similar  
brightness. When you let the camera do it, you're generally going to  
get a light gray apple on a light gray table cloth. And you can't fix  
it afterward -- once the colour info has been discarded, you're stuck  
with the luminosity map the camera decided to use.

With a channel mixer, you can make each colour contribute different  
amounts to overall luminosity, and can easily make a dark gray apple  
on a light gray table cloth -- or vice versa.
