Ever so true. I have two frineds that are Italians living in Kansas and one 
has opened a resturant that is both authentic (totally different than Olive 
Garden etc.) and busy. The other is outspoken on others attempts to cook 
Italian food, although generally complimentary to those who cook as in the 
north, his home.
