Best color for walls in a studio I've ever seen is gray--same as the floor.
The advantage is that you can throw a color gel over the flash and the wall
or floor becomes that color.  No need for multiple rolls of seamless in
various colors.

As long as the paint is a flat paint and not glossy, it doesn't matter too
much about brightness.  Nearly every television broadcast/production
facility I've been in had black or gray painted walls and mammoth green
screen curtains hanging in front of them.
