Personally, I wouldn't. It's worth more as an intact collectible.  It
depends, though.  It might be the perfect thing for writing in the log book
next time you go sailing.

At issue would be the depth the ship sank to. If it was a shallow sinking
and found in less than 80-100 feet of water chances are the cork was able to
keep salt-water from seeping in. But much more than that and it is most
likely contaminated.

If you do insist on opening it, I'd use a quill pen.
