Ian,
I would think any good morter/ cement would last at least as long as the
30 minute door. I'd be more concerned about the ceiling/ floor that
separates the cellar from the living area. I know nothing about Swiss home
construction but in houses with cellars I've owned here, there is only floor
joists' 3/4" plywood and flooring (hardwood, tile or carpet).
