Hi,

I simply use exiftool in the terminal - if you're comfortable with not  
having a graphical interface, it's simple as can be. For example,  
after scanning, but before importing into Apple Aperture for post- 
processing, I simply run a command like:

> exiftool -Make=Linhof -Model="Technika V" -FocalLength=75mm - 
> FNumber=16.0 -ISO=400 Scan-120310-0002.tif


I easily installed exiftool with Macports, but any package manager  
should do :-) If you're on Windows, however, I have no idea what would  
be the best for you.
