Hugin. Defaults work pretty well. I've only begun to scratch the surface 
of what it can do. As with any powerful software there is a learning 
curve. Enblend works so well that I shoot in aperture priority mode and 
let the software sort it out. Before, using manual exposure I tended to 
clip either the shadows or more likely the highlights. Hugin allows you 
to adjust the exposure before the final stich.  Being able to manually 
set control points really helps with difficult images.
