I agree with that definition, at least for the famous delis around Times Square.
However, my experience is that outside of NYC, the 'Rachel' name is randomly
applied to whatever alternative version of
a Reuben strikes the fancy of a restaurant chef or owner. I'm pretty sure I've
even run into a turkey "Rachel" out in
the boonies.
Trying to apply fixed definitions like those in the Wiki to something like a
sandwich is an exercise in futility.
Nevertheless, I have been known to pass on the 'true' definition to waitresses
in many places. :-)
