No, you are assuming it's 2nd declension, but (if it is declinable),
it's undoubtedly 4th declension.
But as a Latin borrowing from Greek, I suspect it is indeclinable.
And in any case, there is only one Olympus!
In every case above, the plural of Olympus is ... Olympus.
