Interpolation out is free — you can make files of any size from any initial 
size - even 1x1.

If you want comparable image quality, the best lenses on a Nikon d810 would be 
sharper than your mamiya 6x7 at 
f/2 to f/8. the 6x7 (or larger) would be sharper at narrower apertures because 
diffraction affects the larger images 
less. However, for the smaller image capture, there is more depth of field at 
all apertures - and less light needed.

And, of course, there is stitching multiple photos together for even more 
resolution as well as no grain - but tilt and 
shift are more limited than some film cameras.

Digital also has the possibility in the future of changing sensor configuration 
(eg 3d-curved or "light field" or 
multiples) to improve, or calculating sharper lenses with known defects which 
can be corrected by math - in the 
camera or later This is already being done for existing defects in common 
lenses in modern cameras for their JPG.
Film, on the other hand, does not have the same R&D expenditures these days....

Digital sensors have the advantage of no grain and steadily improving dynamic 
range and resolution.

Image sensors and film have not been the resolution limitation for quite a 
while. Lenses and diffraction are. 
Large formats or large apertures are the only way to avoid diffraction softness.
