What a great set! Some priceless.

With IBIS on, handholding still proved to be a challenge sometimes. But I
usually try to find some steadiness in a tree, a wall, or whatever I can
find.

Did you set the focal length in the menu to 180 mm? I just encountered a case where a badly mis-set MF focal length did really weird things - all my bad. The IBIS has worked very well for me. And I shoot at 300 mm quite a lot.

Also, do you have Anti-Shock set on, to 1/8 sec.? Several exposures are in the range where shutter shock it can cause un-sharpness. Before finding about that, I attributed some problems at long FLs to IBIS limitations. Although various sources report troubles in roughly the 1/60-1/160 or 1/200 range, I think it extends to 1/320 or 1/400 with long lenses.
