They are actually quite complex. There is a float level that feathers the
windmill. There is also a pressure mechanism that changes the angle to
reduce rotational speed in relation to the wind speed. Depending on desired
flow rates and well depth the gearing is changed. There are even mechanisms
that are used to keep the pump primed and things from freezing up.

They are still made today and used extensively. Most ranchers have started
deploying electric pump systems with solar/wind power because of
reliability and maintenance. Oh and most importantly to be able to still
pump water even when the wind doesn't blow. With no wind you are out there
armstronging the pump handle.
