To get a good overview of what's available in the Mini line--and I think
you'll find it easily will do what you want it to do--call the nice folks
at Other World Computing. They've been  helping me with Mac upgrades, etc.,
for years now. It was OWC, for example, where I learned my old MacBook Pro
17" was not limited to 8GB of RAM, as Apple insisted, but easily would hold
and use 16GB. I bought it, installed it, and the MB 17 recognized it.

No reason why the mini can't do what you want it to do. OWC folks will help
you configure properly. Normally, I would recommend talking with Apple, but
in the world of photo and video processing, they seem to find themselves
constrained by dogma. OWC operates under no such constraints.
