I'm running a hybrid PC/Mac environment, so my choices are a little
different, but related. I tried multiple ways before settling into my
current configuration.
MacBook Pro with Latest/Greatest O/S: 5TB external HD formatted APFS
(case sensitive, encrypted).
Windows Laptop with Latest/Greatest O/S: 4TB external HD formatted
NTFS (encrypted).
To be used by both: 1TB external SSD formatted exFAT (no encryption).
If your Macs support it, I would recommend APFS for an external SSD.
