Thanks Jim.  Yes, I'm afraid I've got these drives in enclosures
littered all over the place.

My new laptop lacks an eSATA port, but it has USB 3.0 and I've got an
adapter coming soon that will allow me to hook back up to the eSATA
devices.  The dock I have offers both eSATA and USB ports.  The USB,
however, is 2.0.  It's pretty fast, but the eSATA throughput is
indistinguishable from the drives in the bays.

I'm not sure why Chuck says that the dock when hooked up via USB is not
a USB device.  What would a USB device then be?  Flash drive?  Is that
it?  Since the computer gets partway through the boot process, it must
be seeing it as a USB device from which it can boot.  Perhaps you are
correct about its being eSATA that is the problem because there is a
setting in BIOS to boot from an IDE HD, which suggests that the drive
type matters in this circumstance.
