Your main problem is going to be loading 120 - not easy at the best
of times!
Something like a Kiev 60/Praktisix which is essentially a giant SLR
might be easiest.
If you use a box type like a 'blad or Mamiya RB/RZ get the wind
handle and get help preloading cassettes?
A Rolleiflex type TLR might be too difficult to load and handle.
